How do you know whether a butcher/restaurant genuinely sells halal meat?

Ideally, we look to see that the establishment possesses a certificate from a halal-certifying authority. In the absence of a certificate, a verbal confirmation from the owner that the products are halal alongside a visit to the premises to check that no alcohol is sold is enough.
